Quick Apple Griddle Cakes

For those chilly Fall mornings, or for a special breakfast treat, try these tasty apple griddle cakes!

Ingredients:
  • 1/4 cup melted butter
  • 1 egg, well beaten
  • 1 cup milk
  • 1 cup grated apples (we recommend a firm, tart apple)
  • 1 and 1/4 cup flour (you can use white or whole wheat)
  • 1 and 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 tablespoon sugar

Directions:

  • Mix egg, milk, butter and apple together.
  • Combine dry ingredients and blend with liquids.
  • Fry at slightly higher temperature than you would for plain pancakes.
  • Makes about 12 griddle cakes
